Pasta is so easy to do badly. Like tofu in that way, IMO.

Eh, know nothing about tofu but pasta has to be the easiest thing to get right after hard boiling an egg. Unless you're actually talking about making pasta from scratch which is just lunacy.

Just speaking from personal experience, I s'pose. Maybe I have a very narrow definition of "good" pasta!

Pasta is a piece of fucking piss to cook. Doing it well is hardly a mystery. Making it from scratch is also easy. Corrie Della Sport isn’t on my hate list and is an extremely respected newspaper.

Not strictly true. When we went to Rome a few years back, the first meal we had on the very first evening was in a beautiful looking restaurant in this lovely scenic little square. They bought the pizza out and it looked like something you can get from the frozen section in Tesco. The mrs was livid!
