Wow. I've just learnt that for heavily starchy foods such as pasta, reheating it after cooking is actually more healthy and beneficial than freshly cooked or chilled pasta!!
The way it works is that in the body starch is broken down into sugars by enzymes which produces an insulin response to get rid of the blood sugar. But when chilled pasta is consumed the insulin response is around 50% lower. And with reheated pasta it's 50%lower still which was a big surprise to scientists.
Apparently when starches are left to cool down they become much more resistant to being broken down by the enzymes in the body, so the sugar hit is less and the calories absorbed are lower too. But also, astoundingly, the lower absorption means the pasta travels down into the large intestine (bowel) more intact and so contributes as healthy fibre in the diet. So it's a double health benefit!
