The " Honey I'm home and I'm bloody starving , what's for dinner " Thread.

Did cayenne and cajun fried chicken with pepper fries tonight. Really easy and quick and tasted absolutely divine.

Quick summary of the 3 dishes from week 2 - Peppered Mackerel Spaghetti (very happy with), Gingered Chicken Noodles (absolute disaster), Mediterranean Style Fish Stew (quite happy with (but very happy that I understood what was going on and can make improvements next time)).

So the stir fry Gingered Chicken Noodles. Jesus Christ, nightmare that went from bad to worse and ended up in the bin:

The cooking instructions were very basic (as mentioned before I need idiot-speak flat pack wardrobe assembly type instructions!) but before I even started it just felt as though the timings were off and everything was going to end up raw (it did).

I started with too small a pan, (the chicken was fine), but the carrots, broccoli florets and baby corn appeared way more than necessary in quantity, and foolishly I didn’t cut them down enough so they were too large and had no chance of cooking properly, the 100mls of stock didn’t look like anywhere near enough and that soon disappeared and the chicken over cooked while I was trying to avoid the veg being rock hard. Oh and in the middle of that I had to rummage in a draw for a large wok (yeah, I really did start with a smallish pan) because the noodles fell over the side of the thing while shoehorning them in. Bloody hell, it was like a bad comedy sketch and no fun at all.

Felt very demoralised and ready to throw it all at a wall, jack it in and order Gousto. Had a break for a couple of days then went with the Mediterranean Fish Stew with worked out fine and restored a little bit of confidence.

6 meals in with what amounts to 5 reasonable successes so I guess even allowing for the relatively simplicity that’s decent progress overall.

Won’t bore you with a blow-by-blow account going forward but that’s the state of play so far!

From a standing start a 5/6 success ratio is great!

Don't worry about the fuck up - hey, we all fuck up at times in our actual jobs that we are allegedly qualified to do, don't we. But you just get on with it and you know now what not to do.

A trio of salmon;

Salmon and asparagus tartlet, tomato and pepper salsa. Salmon and basil fishcake with curried sweetcorn chowder. Mascarpone salmon and roast pepper cigarillo. Served with warm potato salad.

It’s making me want to rush down to Coles when they open and buy some big bits of cow and the ingredients to make a Bearnaise (personal preference over bordelaise but both are a different world to salad cream)
Had a sirloin steak this evening, same trimmings, but opted for the Cafe du Paris sauce. Delicious.
 
Al's Kitchen 30 minute chicken tikka masala last night - not my choice of curry but one I knew the kids would eat.

Was absolutely tremendous. I used Al's chicken tikka recipe and marinaded that overnight, and thought I'd air fry it - and it worked a treat. Even had the charred bits on the edges. I'll definitely use the air fryer in future for these - so much easier, quicker and convenient to cook and clean up afterwards.

The sauce was superb - such a good recipe packed with flavour and managed to get the right consistency, though I did siphon off some of the excess oil prior to adding the chicken.

Going to try one of my favourites next time - garlic chilli chicken.

There aren't written instructions but he tends to put the ingredients list in the comments under the videos.

They're comfortably the best curry recipes I've ever tried - fun to do and very tasty indeed.
 
Looks decent!

I don't think I cooked anything properly until I was 16/17.
