The " Honey I'm home and I'm bloody starving , what's for dinner " Thread.

I do like a prawn green curry, what's your recipe out of interest?

I made my own paste up.

curry leaves as I couldn't get kaffir lime leaves
2 green chillis
big handful of coriander
ground coriander seeds
ground peppercorns
ground cumin seeds
zest and juice of one lime
tablespoon of lemongrass (couldn't get fresh)
you could add galangal by I just went for an extra squeeze of lime juice
inch of ginger
2 shallots
4 cloves of garlic

whizz that lot for your paste.

then just bunged finely chopped shallots into a wok, threw in the paste, 200ml of coconut milk and about half a litre of fish stock.
added another chilli, clove of garlic and a bit more thinly sliced ginger.

that was about it. let it reduce. add a load more coriander.

at the end raw prawns went in for about 90 seconds. Quick stir, onto the rice and dress with very finely sliced red chilli.

rather pokey, but bloody lovely.

Jesus that's a lot of coriander!

It is a tricky dish to make, that's why I rarely do it, it's not easy getting fresh lemongrass/lime leaves etc. your recipe sounds good, if not a tad too garlicky! How many were you cooking for?

Just two. I would possibly reduce the garlic a little bit, but I love garlic and so does the missus. No vampires at Paddington towers.

Burns Supper last night - Haggis is great, can't go wrong with mash, but neeps are just plain awful, like eating the skin that you pull your feet after a bath.

Yeah, I always swap the neeps for peas. Made haggis potato cakes with my leftovers, with a couple of fried eggs, for breakfast.

Fish, chips and mushy peas tonight :licklips:

Why do you need water to cook that?

Why do you need water to cook that?

Not to cook, but I don't want a stinking fish pan and stinking fish plates left around the place as I cant run dishwasher. Easier just to get a meatball Sub and eat it out the wrapper.

Didn't go for the meatball Subway, instead opted for the Sweet Onion Chicken Teriyaki Sub, which i'm just about to get stuck into :licklips:
