Surely the pass didn't go to him when he was offside, he was back onside when the ball came to him....or am I misunderstanding first/second phase?

It's exactly what VAR is for. The officials got it right, he's offside (or at least his leg is) under the current rules.
 
Looking at the still I don't think he is. The top of the defender's shoulder is pretty much level with the end of his boot.

However, VAR twats are now claiming the shoulder doesn't count, hence the decision. Sorry but that is bollocks. You are allowed to score with your shoulder so it counts in my book.
