If it were a bearnaise fondue, it would be epic (well, apart from the fact that a bearnaise just wouldn't work in a fondue)

It’s Bear… lack of salad cream clearly.

That said Peppercorn is the dysentery of the sauce world.

Just how it looks with brown sludge pouring out of it! Reminds me of the times I have a flare up of my IBD.

Peppercorn is ok but a bit boring.

I've never tried Bearnaise, sound a bit too buttery. I'd like to try a Borderlaise as that sounds quite nice.
 
Bearnaise is a hollandaise with a shallot, tarragon, white wine, white wine vinegar reduction and a bit of chervil whisked into it.

The only butter used is in making the hollandaise.

It isn't a particularly buttery sauce in any way shape or form. Although I whisk extra butter into any sauce I make just before using it, to give it a glossy sheen. Montee au beurre, the French call it.
 
I’d take bearnaise with some thing leaner like a fillet but anything with fat needs a chimi imv
